Instructions
- Prepare Filling: In a medium bowl, combine 1 cup of pulled pork, 1/2 cup coleslaw, and 1/2 cup shredded cheddar cheese. Mix gently to distribute the ingredients evenly.
- Lay Wrapper: Place an egg roll wrapper flat on a clean surface with one corner pointing towards you, forming a diamond shape.
- Add Filling: Spoon about 2 tablespoons of the pulled pork mixture into the center of the wrapper, slightly closer to the corner nearest you.
- Fold and Roll: Fold the bottom corner over the filling, then fold in the two side corners snugly, and roll tightly towards the top corner. Use a little water on the top edge to seal the roll firmly.
- Heat Oil: Pour oil into a deep pan or skillet to a depth of about 2 inches and heat over medium heat until it reaches 350°F (175°C), or hot enough to sizzle a small piece of wrapper.
- Fry Egg Rolls: Carefully place the egg rolls seam side down into the hot oil, frying a few at a time without overcrowding. Fry for about 3-5 minutes, turning occasionally, until golden brown and crispy on all sides.
- Drain and Serve: Remove the fried egg rolls with a slotted spoon and drain on paper towels to remove excess oil. Serve warm for the best taste and texture.
