Description

A delicious and creamy Marry Me Chicken Pasta recipe featuring tender shredded chicken, sun-dried tomatoes, and a flavorful white wine cream sauce tossed with perfectly cooked pasta. Ready in just 30 minutes, this comforting dish is perfect for a quick weeknight dinner or a special occasion.

Ingredients

Scale

For the Pasta

  • 8 ounces uncooked pasta (any shape)

For the Sauce

  • 2 tablespoons butter
  • ½ tablespoon all-purpose flour
  • 3-4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • â…“ cup dry white wine or chicken broth
  • 1 cup heavy cream
  • â…“ cup sun-dried tomatoes, chopped
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes
  • 2 cups cooked or rotisserie chicken, shredded
  • â…“ cup freshly grated Parmesan cheese, plus more for serving
  • 1 small handful fresh basil, torn or chopped
  • Salt and pepper, to taste

Instructions

  1. Cook Pasta: Cook the pasta in salted boiling water according to the package directions until al dente. Before draining, reserve some pasta water for later use.
  2. Make Sauce: While the pasta cooks, melt the butter in a skillet over medium heat. Sprinkle in the all-purpose flour and cook for 1 minute, stirring constantly to form a roux.
  3. Add Aromatics and Liquids: Stir in the minced garlic, tomato paste, and white wine (or chicken broth). Cook and stir for another minute to develop the flavors.
  4. Thicken Sauce: Whisk in the heavy cream until smooth. Then add the chopped sun-dried tomatoes, dried oregano, crushed red pepper flakes, and shredded chicken. Continue cooking the sauce until it thickens to your desired consistency.
  5. Finish Sauce: Stir in the freshly grated Parmesan cheese and chopped basil. Remove the skillet from heat and season generously with salt and pepper.
  6. Combine Pasta and Sauce: Add the drained pasta directly into the skillet and toss everything together to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach the perfect consistency.
  7. Serve: Serve immediately while hot, with extra Parmesan cheese on the side if desired.

Notes

  • You can substitute dry white wine with extra chicken broth for a non-alcoholic version.
  • Use freshly grated Parmesan for the best flavor and texture.
  • Reserve pasta water as it helps adjust the sauce consistency perfectly.
  • For a spicier dish, increase the crushed red pepper flakes according to your taste.
  • If using rotisserie chicken, shredding it evenly ensures every bite has a good amount of chicken.
