Mango Mixture
- 2 large ripe mangoes, peeled and chopped
- 1 tablespoon homemade simple syrup
- 1/3 cup Greek yogurt
Yogurt Mixture
- 2/3 cup Greek yogurt
- Remaining homemade simple syrup (approximately 3/4 cup)
Instructions
- Prepare the Mango and Yogurt Mixtures: Peel and chop the mangoes into small pieces. Blend the chopped mangoes with 1 tablespoon of the homemade simple syrup until smooth and creamy. In a bowl, mix one-third of the Greek yogurt with the mango puree and additional simple syrup as needed to taste. In a separate bowl, whisk together the remaining two-thirds of the Greek yogurt with the rest of the simple syrup until smooth.
- Assemble the Popsicles: Take popsicle molds and alternate layers by spooning the mango-yogurt mixture and the plain yogurt mixture into the molds. Use a skewer or a spoon to gently swirl layers if desired for a marbled effect.
- Freeze the Popsicles: Place the assembled molds in the freezer and let them freeze for 4 to 5 hours, or until fully solidified.
- Serve the Popsicles: When ready to serve, run the molds under warm water for a few seconds to loosen the popsicles. Gently pull the popsicles out of the molds and enjoy a cool, creamy treat.
