- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
Legumes
- 1 cup lentils
Liquids & Canned Goods
- 2 cups vegetable broth
- 1 can diced tomatoes (about 14.5 oz)
Spices & Seasonings
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Oils
- 2 tablespoons olive oil
Instructions
- Rinse Lentils: Thoroughly rinse 1 cup of lentils under cold running water to remove any dirt or debris.
- Heat Oil: In a large pot, heat 2 tablespoons of olive oil over medium heat to prepare for sautéing the vegetables.
- Sauté Aromatics: Add diced onion and minced garlic to the pot and cook, stirring occasionally, until they become soft and fragrant, about 3-4 minutes.
- Add Vegetables: Stir in chopped carrots and bell pepper, cooking for another 5 minutes to slightly soften the vegetables.
- Combine Ingredients: Add rinsed lentils, 2 cups of vegetable broth, 1 can of diced tomatoes, 1 teaspoon cumin, and 1 teaspoon paprika to the pot. Stir well to combine all ingredients.
- Simmer Stew: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for about 30 minutes or until lentils and vegetables are tender.
- Season and Serve: Taste the stew and season with salt and pepper as desired. Stir well before serving hot.
Notes
- For a thicker stew, simmer uncovered for an additional 10 minutes to reduce excess liquid.
- You can substitute green or brown lentils if preferred, but adjust cooking time accordingly.
- Adding a splash of lemon juice or a handful of fresh herbs like parsley or cilantro enhances the flavor just before serving.
- This stew freezes well; store in airtight containers for up to 3 months.
- For extra protein, consider adding diced tofu or cooked chicken (if not vegetarian).
