- Prepare caramel mixture: In a large microwave-safe bowl, combine the brown sugar, corn syrup, salted butter, and salt. Microwave on high for 1 minute until the butter melts and the mixture begins to bubble.
- Cook caramel further: Stir the mixture, then microwave for another minute. Repeat this stirring and microwaving cycle until the mixture has been microwaved for a total of 5 minutes, ensuring it is hot and bubbling.
- Add leavening and flavor: Mix in the baking soda and vanilla extract into the hot caramel mixture; stir well. The mixture will foam up slightly, creating a lighter texture.
- Coat popcorn: Fill a large paper grocery bag with the popped popcorn. Pour the warm caramel mixture over the popcorn inside the bag, then gently stir to evenly coat all the popcorn pieces.
- Microwave coating process: Fold the top of the bag over and place it in the microwave. Cook on high for 1 minute. Remove and shake the bag vigorously without opening it. Microwave for another minute.
- Repeat heating and shaking: Continue by shaking the bag again, then microwave for 30 seconds. Shake once more, and microwave for a final 30 seconds to set the coating.
