  • 3 tbsp Dijon mustard

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp lemon juice
  • ½ cup chicken broth


Instructions

  1. Season the chicken: Pat the chicken breasts dry with a paper towel to remove excess moisture. Season both sides generously with salt and black pepper to enhance the flavor and help with searing.
  2. Sear the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, place the chicken breasts in the skillet and sear them for about 4–5 minutes on each side until they develop a golden brown crust and reach an internal temperature of 165°F, indicating they are fully cooked. Remove the chicken from the skillet and set aside.
  3. Prepare the sauce: Using the same skillet, add the minced garlic and chopped rosemary and sauté for about 30 seconds until fragrant. Then stir in 3 tablespoons of Dijon mustard, 1 tablespoon of lemon juice, and ½ cup of chicken broth. Allow the mixture to simmer gently for 2–3 minutes until the sauce slightly thickens and the flavors meld together.
  4. Combine chicken and sauce: Return the cooked chicken breasts to the skillet. Spoon the rosemary Dijon sauce over the top of each breast. Cook everything together for an additional 1–2 minutes, allowing the chicken to soak up the flavors and warm through.
