Description

This Cauliflower Jalapeno Popper Casserole is a delicious, low-carb dish combining tender baked chicken, spicy jalapenos, crispy bacon, and a rich cheese mixture layered over fresh cauliflower. Perfect for a comforting dinner with a kick, it bakes to golden perfection with gooey cheddar topping.

Ingredients

Scale

Protein and Vegetables

  • 1 lb chicken breast
  • 6 jalapenos, halved and seeds removed
  • 3 cups fresh cauliflower florets, cut into small bite-size pieces
  • 6 strips thick-cut bacon

Dairy

  • 1 ¼ cup cheddar cheese (divided)
  • 8 oz cream cheese, â…“ less fat
  • ½ cup light sour cream
  • ¼ cup low-fat milk

Seasonings and Oils

  • 2 tablespoons olive oil
  • 1 teaspoon cayenne pepper
  • Salt, to taste
  • 1 teaspoon paprika (assumed from context; added to cheese mixture)

Instructions

  1. Preparation: Preheat your oven to 375°F (190°C) to prepare for baking the chicken, jalapenos, bacon, and later the casserole.
  2. Cook Chicken and Jalapenos: Place the chicken breast and halved, seeded jalapenos on a baking sheet. Drizzle with olive oil and season with salt. On a separate baking sheet, arrange the bacon strips. Bake both sheets in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the bacon is crispy.
  3. Prepare Cheese Mixture: In a large mixing bowl, combine ¾ cup of the cheddar cheese, cream cheese, light sour cream, low-fat milk, and paprika. Mix thoroughly until smooth and creamy.
  4. Assemble Casserole Filling: Once cooked, crumble the bacon, shred the chicken breast, and dice the baked jalapenos. Add ¾ of the diced jalapenos, shredded chicken, and ¾ of the crumbled bacon to the cheese mixture. Stir to combine evenly.
  5. Layer Casserole: In a 9 x 12-inch baking dish, spread the fresh cauliflower florets evenly over the bottom. Spoon and spread the prepared cheese, chicken, jalapeno, and bacon mixture on top of the cauliflower layer.
  6. Add Toppings and Bake: Sprinkle the remaining ½ cup of cheddar cheese over the top, then scatter the remaining jalapenos and bacon pieces. Bake the casserole in the oven at 375°F for 20 minutes, or until the cheese on top is melted and golden brown.

Notes

  • Removing the seeds from jalapenos helps reduce the heat but keeps the flavor. Adjust according to your spice preference.
  • You can prepare the chicken and bacon ahead of time to speed up assembly.
  • This casserole is great for meal prep and reheats well in the oven or microwave.
  • For a spicier version, leave some seeds in the jalapenos or add extra cayenne pepper.
  • Use full-fat cream cheese or sour cream for a richer dish if dietary restrictions allow.
