Instructions
- Preparation: Preheat your oven to 375°F (190°C) to prepare for baking the chicken, jalapenos, bacon, and later the casserole.
- Cook Chicken and Jalapenos: Place the chicken breast and halved, seeded jalapenos on a baking sheet. Drizzle with olive oil and season with salt. On a separate baking sheet, arrange the bacon strips. Bake both sheets in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the bacon is crispy.
- Prepare Cheese Mixture: In a large mixing bowl, combine ¾ cup of the cheddar cheese, cream cheese, light sour cream, low-fat milk, and paprika. Mix thoroughly until smooth and creamy.
- Assemble Casserole Filling: Once cooked, crumble the bacon, shred the chicken breast, and dice the baked jalapenos. Add ¾ of the diced jalapenos, shredded chicken, and ¾ of the crumbled bacon to the cheese mixture. Stir to combine evenly.
- Layer Casserole: In a 9 x 12-inch baking dish, spread the fresh cauliflower florets evenly over the bottom. Spoon and spread the prepared cheese, chicken, jalapeno, and bacon mixture on top of the cauliflower layer.
