Description

Delight in these charming Berry Tartlets featuring a crisp, buttery pastry shell filled with luscious whipped cream and topped with a medley of fresh berries. Perfect for a light dessert or a sweet snack, these tartlets combine homemade pastry with fresh flavors for an elegant treat.

Ingredients

Scale

Pastry Dough

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted cold butter
  • ¼ cup granulated sugar

Filling and Topping

  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Pastry Dough: In a bowl, combine the all-purpose flour and granulated sugar. Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture becomes crumbly and resembles coarse sand.
  2. Chill the Dough: Gather the crumbly dough and form it into a disk. Wrap it tightly in plastic wrap and refrigerate for 30 minutes to firm up and prevent the pastry from shrinking during baking.
  3. Preheat Oven & Prepare Dough: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cutter, cut circles sized to fit your muffin tins.
  4. Shape and Bake: Press the dough circles gently into the muffin tins to form tart shells. Bake for 15-20 minutes until the shells turn golden brown. Once baked, remove from oven and let them cool completely in the tins before removing.
  5. Prepare Whipped Cream: In a chilled bowl, beat the heavy cream together with powdered sugar and vanilla extract until soft peaks form—be careful not to overwhip.
  6. Assemble the Tartlets: Once the pastry shells are completely cool, fill each with a generous spoonful of whipped cream. Top with a colorful assortment of fresh mixed berries for a beautiful and delicious finish.

Notes

  • Ensure butter is cold before cutting into the flour to achieve a flaky pastry texture.
  • Chilling the dough helps prevent shrinkage and makes it easier to handle.
  • Customize the berry topping with seasonal fruits as desired.
  • For best results, serve immediately after assembling to keep the crust crisp.
