- 8 ounces reduced-fat feta cheese block, cut into 16 1″ cubes
- 2 mini cucumbers, cut into 32 thin slices
- 500 grams watermelon, cut into 32 1″ cubes (about 1/4 of a large watermelon)
- 16 to 32 fresh mint leaves, halved if very large
- Tajin seasoning, to taste
Instructions
- Prepare the Watermelon and Cucumber: Slice off the watermelon rind and cut the flesh into 32 uniform 1-inch cubes, each weighing approximately 16 grams. Next, thinly slice the mini cucumbers into 32 even slices.
- Cut the Feta Cheese: Take the reduced-fat feta cheese block and cut it lengthwise in half, then into 16 neat, 1-inch cubes. Allow the cheese to come to cool room temperature to prevent it from crumbling while slicing.
- Assemble the Skewers: Using small skewers or toothpicks, start by placing a mint leaf on one end, followed by a watermelon cube, a cucumber slice, and then carefully skewer the feta cube. Add another cucumber slice, another watermelon cube, and finish with a mint leaf. For large mint leaves, halve and fold them to fit neatly on the skewers. Place the assembled skewers on a serving platter.
- Add the Tajin Seasoning: Just before serving, sprinkle the assembled skewers generously with Tajin seasoning. This ensures that the salt does not draw too much moisture from the fruits and cheese, keeping the skewers fresh and not watery. Serve extra Tajin on the side for guests to add as desired.
