- Mix everything together: In a large bowl, combine the drained and rinsed chickpeas, diced tomatoes with juices, red onion, jalapeños, cucumber, chopped cilantro, and lime juice. Gently stir the ingredients to evenly combine while keeping the textures intact.
- Chill the mixture: Cover the bowl with a lid or plastic wrap and refrigerate the mixture for at least 1 hour. This resting time allows the flavors to meld and the lime juice to slightly marinate the vegetables and chickpeas, intensifying the ceviche flavor.
