  • 1/2 cup chopped green onions
  • Sesame seeds for garnish (optional)

Teriyaki Sauce

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (cornstarch slurry)


Instructions

  1. Cook the Rice: Cook the jasmine or basmati rice according to the package directions until tender. Once cooked, fluff the rice and set aside to keep warm.
  2. Prepare Teriyaki Sauce: In a small saucepan over medium heat, combine soy sauce, brown sugar, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring this mixture to a gentle simmer. Stir in the cornstarch slurry and cook for 2 to 3 minutes until the sauce thickens. Remove from heat and set aside.
  3. Cook the Beef: Heat vegetable oil in a skillet over medium-high heat. Add the thinly sliced beef strips and cook for 4 to 5 minutes, stirring occasionally, until browned and cooked through. Pour in half of the prepared teriyaki sauce and stir to thoroughly coat the beef. Remove the skillet from heat.
  4. Sauté Pineapple and Bell Pepper: Using the same skillet, add the pineapple chunks and diced red bell pepper. Sauté lightly for 2 to 3 minutes until they become slightly caramelized, enhancing their natural sweetness.
  5. Assemble the Stacks: Using a round mold or a measuring cup, press a layer of cooked rice into the bottom. Carefully add a layer of the sautéed pineapple and peppers on top of the rice. Then, add the teriyaki beef layer. Drizzle the remaining teriyaki sauce over the stack. Garnish with chopped green onions and a sprinkle of sesame seeds. Carefully unmold the stack and serve warm.
