- 2 cups frozen corn
- 1 pound ground chicken (or ground beef)

- 15 ounces black beans, drained (do not rinse)
- 14.5 ounce can fire-roasted diced tomatoes with garlic, drained
- ½ cup water
- 2 (1-ounce) packets of taco seasoning
- 1 cup salsa
- 6 (8-inch) flour tortillas
- 16-ounce can refried beans
- 3 cups shredded Mexican cheese, divided

Instructions
- Preheat Oven and Brown Meat: Preheat your oven to 400°F. In a large skillet, heat the olive oil over medium-high heat. Add the ground chicken and diced green and red peppers, cooking until the meat is browned and peppers have softened.
- Prepare Taco Filling: Stir in the frozen corn, drained black beans, drained fire-roasted diced tomatoes, water, and taco seasoning packets. Mix everything well and cook for about 3 minutes, allowing the flavors to meld and the mixture to heat through.
- Layer Lasagna: Spread the salsa evenly at the bottom of a 9×13 inch baking dish. Place two flour tortillas on top of the salsa. Spoon and layer one-third of the meat mixture over the tortillas, then spread half of the refried beans, followed by one-third of the shredded Mexican cheese. Repeat the layers with two more tortillas, one-third of the meat mixture, the remaining refried beans, and one-third of the cheese. Finally, top with the last two tortillas, the remaining meat mixture, and the final portion of cheese.
- Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly, and the dish is heated through.
- Serve and Garnish: Remove from oven and let it cool slightly. Garnish with fresh cilantro if desired, and serve with optional jalapeno slices, tomato halves, and sour cream for added flavor and texture.
