- Mix the topping: In a bowl, combine the oats, 1/2 cup brown sugar, flour, cinnamon, and melted butter. Mix until the mixture becomes crumbly.
- Prepare the base: Spread half of the crumbly topping evenly into a greased 9×9-inch baking pan to form the crust layer.
- Add the fruit: Arrange the peeled and sliced peaches along with the sliced strawberries evenly over the crust layer.
- Make the syrup: In a saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly until the mixture thickens.
- Flavor the syrup: Remove the saucepan from heat and stir in the vanilla extract. Pour this syrup evenly over the fruit layer in the baking pan.
- Finish the topping: Sprinkle the remaining half of the crumbly topping over the syrup-covered fruit to form the crisp topping.
