Description

This Strawberry Peach Crisp recipe is a delightful dessert combining the juicy sweetness of fresh peaches and strawberries with a crunchy oat and brown sugar topping. Baked to golden perfection and optionally broiled for an extra crisp finish, this dessert is perfect for summer gatherings or a comforting treat any time of the year.

Ingredients

Scale

Topping

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/3 cup salted butter, melted
  • 1/2 tsp cinnamon

Fruit Filling

  • 2 1/2 cups peaches, peeled and sliced (about 3 peaches)
  • 1 cup sliced strawberries

Syrup

  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mix the topping: In a bowl, combine the oats, 1/2 cup brown sugar, flour, cinnamon, and melted butter. Mix until the mixture becomes crumbly.
  2. Prepare the base: Spread half of the crumbly topping evenly into a greased 9×9-inch baking pan to form the crust layer.
  3. Add the fruit: Arrange the peeled and sliced peaches along with the sliced strawberries evenly over the crust layer.
  4. Make the syrup: In a saucepan, combine 1/4 cup brown sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly until the mixture thickens.
  5. Flavor the syrup: Remove the saucepan from heat and stir in the vanilla extract. Pour this syrup evenly over the fruit layer in the baking pan.
  6. Finish the topping: Sprinkle the remaining half of the crumbly topping over the syrup-covered fruit to form the crisp topping.
  7. Bake: Place the baking pan in a preheated oven at 350°F (175°C) and bake for 35 minutes until the topping is golden and the fruit is bubbly.
  8. Optional Broil: For an extra crisp and golden finish, broil the crisp for 2-3 minutes. Watch carefully to prevent burning.

Notes

  • Use ripe but firm peaches for the best texture.
  • Peeling peaches before slicing ensures a smoother texture in the filling.
  • Broiling is optional but adds a beautiful golden crust on top.
  • Serve warm with vanilla ice cream or whipped cream for an extra indulgence.
  • Leftovers can be refrigerated and gently reheated before serving.
