Egg Mixture
- 4 large eggs
- 1 tablespoon milk or water
- Salt and black pepper to taste
Stir-Fry
- 1 tablespoon sesame oil or neutral oil
- 2 garlic cloves, minced
- 6 cups fresh spinach, washed and trimmed
- 1 tablespoon soy sauce or tamari (for gluten-free)
Optional Garnish
- 1 teaspoon toasted sesame seeds
- Chopped green onions
Instructions
- Prepare the eggs: In a small bowl, whisk together the eggs, milk or water, and season with a pinch of salt and black pepper until well combined.
- Heat the oil and garlic: Place a large skillet or wok over medium heat and add the sesame or neutral oil. Once hot, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Scramble the eggs: Pour the egg mixture into the pan and gently scramble until the eggs are mostly set but still slightly soft, then push them to one side of the pan.
- Stir-fry the spinach: Add the fresh spinach to the empty side of the pan and stir-fry for 1 to 2 minutes until it wilts down.
- Combine and season: Drizzle the soy sauce or tamari over the eggs and spinach, stir everything together, and cook for an additional 30 seconds to combine flavors and heat through.
- Serve and garnish: Remove the skillet from heat and transfer to serving plates. Garnish with toasted sesame seeds and chopped green onions if desired. Serve immediately for best flavor.
