Instructions

  1. Cook Noodles: Cook noodles according to package directions until tender, then drain and set aside.
  2. Make Peanut Sauce: In a bowl, whisk together peanut butter, gochujang, rice vinegar, honey, soy sauce, and water until the sauce is smooth and well combined.
  3. Cook Chicken and Vegetables: Heat toasted sesame oil in a skillet or wok over medium-high heat. Add the chicken strips and cook until they are no longer pink and cooked through. Add minced garlic and ginger, sautéing just until fragrant, about 1 minute. Then add sliced red bell pepper and cook until tender-crisp, around 3-4 minutes.
  4. Combine and Serve: Remove the skillet from heat. Add the cooked noodles and peanut sauce to the skillet, tossing everything together to coat evenly in the sauce. Garnish with fresh basil leaves, and serve with lime wedges on the side. Optionally, sprinkle crushed peanuts on top for added texture and flavor.
