Cobbler Topping

  • ¾ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp ground cinnamon
  • Pinch of salt
  • 3 tbsp unsalted butter, cold and cut into small pieces
  • 2-3 tbsp milk (as needed)


Instructions

  1. Prepare the Peach Filling: In a medium saucepan, combine the peaches, sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat, stirring constantly, until the mixture thickens and the peaches soften, about 5 to 7 minutes. Remove from heat and set aside to cool.
  2. Make the Crust: Preheat the oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8 to 10 minutes, then remove from the oven and let cool.
