  • 1 can (14 oz) baked beans in tomato sauce


Instructions

  1. Heat the Oil and Cook Onions: Heat the vegetable oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3–4 minutes until softened and translucent.
  2. Add Bell Peppers: Stir in the diced green and red bell peppers and cook for an additional 3 minutes until they begin to soften.
  3. Add Garlic and Spices: Add the minced garlic, curry powder, paprika, and chopped fresh chilies if using. Stir constantly for about 30 seconds until the mixture is fragrant and the spices are well combined.
  4. Incorporate Carrots: Mix in the grated carrots and cook the mixture for 2 minutes, allowing the carrots to slightly soften and blend with the spices.
  5. Add Tomatoes and Simmer: Pour in the canned chopped tomatoes and bring the mixture to a simmer. Let it cook uncovered for 5–7 minutes until the sauce thickens slightly and flavors meld together.
  6. Stir in Baked Beans: Add the baked beans in tomato sauce to the skillet, stir gently to combine, and cook for another 5 minutes, stirring occasionally to prevent sticking.
  7. Season and Serve: Season the chakalaka with salt and black pepper to taste. Serve warm as a side dish or over pap, rice, or alongside grilled meats.
