Instructions
- Heat the Oil and Cook Onions: Heat the vegetable oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3–4 minutes until softened and translucent.
- Add Bell Peppers: Stir in the diced green and red bell peppers and cook for an additional 3 minutes until they begin to soften.
- Add Garlic and Spices: Add the minced garlic, curry powder, paprika, and chopped fresh chilies if using. Stir constantly for about 30 seconds until the mixture is fragrant and the spices are well combined.
- Incorporate Carrots: Mix in the grated carrots and cook the mixture for 2 minutes, allowing the carrots to slightly soften and blend with the spices.
- Add Tomatoes and Simmer: Pour in the canned chopped tomatoes and bring the mixture to a simmer. Let it cook uncovered for 5–7 minutes until the sauce thickens slightly and flavors meld together.
- Stir in Baked Beans: Add the baked beans in tomato sauce to the skillet, stir gently to combine, and cook for another 5 minutes, stirring occasionally to prevent sticking.
- Season and Serve: Season the chakalaka with salt and black pepper to taste. Serve warm as a side dish or over pap, rice, or alongside grilled meats.
