Description

This hearty sausage, green bean, and potato casserole is a comforting, one-dish meal perfect for weeknight dinners. Smoked sausage pairs beautifully with tender baby potatoes and crisp green beans, all seasoned with aromatic herbs and spices. The casserole is baked to perfection, with an optional cheesy topping for added richness.

Ingredients

Scale

Sausage and Vegetables

  • 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 pound baby red potatoes, quartered
  • 1 pound fresh green beans, trimmed and halved
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Seasoning and Extras

  • 1/4 cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the casserole.
  2. Prepare Ingredients: In a large mixing bowl, combine the sliced sausage, quartered potatoes, green beans, and sliced onion. Add the minced garlic, olive oil, smoked paprika, dried thyme, dried rosemary, salt, and pepper. Toss everything together thoroughly until all ingredients are evenly coated with the seasoning and oil.
  3. Assemble Casserole: Transfer the sausage and vegetable mixture into a large baking or casserole dish, spreading it out evenly for uniform cooking.
  4. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes to allow the potatoes to begin softening and flavors to meld.
  5. Bake Uncovered: Remove the foil, stir the ingredients gently to redistribute, then bake uncovered for an additional 15-20 minutes. This step ensures the potatoes become tender and the sausage gets nicely browned.
  6. Optional Cheese Topping: If using cheese, sprinkle the shredded cheddar over the casserole during the last 5 minutes of baking. Bake until the cheese melts and bubbles.
  7. Serve: Remove from oven and let the casserole cool slightly before serving to allow flavors to settle and make serving easier.

Notes

  • You can substitute smoked sausage with kielbasa or any smoked sausage variety you prefer.
  • Fresh green beans work best, but frozen green beans can be used if fresh are unavailable.
  • Adjust seasoning amounts to suit your taste, especially salt and pepper.
  • The optional cheese topping adds richness but can be omitted for a lighter dish or dairy-free option.
  • Ensure potatoes are cut into uniform sizes for even cooking.
