For the Salmon Burgers:
- 1 lb fresh salmon (skin removed and finely chopped or pulsed in a food processor)
- ¼ cup breadcrumbs
- 1 egg
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons red onion (finely diced)
- 1 tablespoon capers (chopped, optional)
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
For the Basil Mayo:
- ½ cup mayonnaise
- 2 tablespoons fresh basil (finely chopped)
- 1 teaspoon lemon juice
- 1 small garlic clove (minced)
- Pinch of salt and pepper
To Serve:
- 4 burger buns
- Lettuce
- Tomato slices
- Red onion rings
Instructions
- Prepare the Salmon Patties: In a large bowl, combine the finely chopped salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, diced red onion, chopped capers (if using), lemon juice, salt, and black pepper. Gently mix until all ingredients are well incorporated. Divide the mixture into 4 equal portions and shape each into a patty. Place the patties in the refrigerator and chill for at least 15–20 minutes to help them firm up for easier cooking.
- Make the Basil Mayo: While the patties chill, mix together the mayonnaise, finely chopped fresh basil, lemon juice, minced garlic, and a pinch of salt and pepper in a small bowl. Stir until smooth and well combined. Refrigerate the basil mayo until ready to serve to enhance the flavors.
- Cook the Salmon Burgers: Heat the olive oil in a skillet over medium heat. Once hot, carefully add the salmon patties to the pan. Cook each side for 3–4 minutes until the patties are golden brown and fully cooked through, ensuring the internal temperature reaches at least 145°F (63°C).
- Assemble the Burgers: Optional: Toast the burger buns lightly for added texture and flavor. Spread a generous layer of basil mayo on the bottom half of each bun. Layer with fresh lettuce leaves, tomato slices, a cooked salmon patty, and red onion rings. Top with the other half of the bun and serve the burgers immediately while warm.
Notes
- These salmon burgers can also be cooked on a grill or grill pan using foil to prevent sticking.
- For a lighter alternative to basil mayo, try tartar sauce or Greek yogurt mixed with fresh dill.
- Ensure salmon is fresh and finely chopped for better texture and binding.
