Ingredients
Scale
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- ½ tablespoon olive oil
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
Assembly
- 24 ounces marinara sauce (1 jar)
- 4 slices thick-cut mozzarella cheese
- 30 slices pepperoni
- 1 cup freshly shredded mozzarella cheese
- â…› cup freshly grated Parmesan cheese
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C). Lightly spray a large baking dish with nonstick spray to prevent sticking.
- Season Chicken: In a bowl, whisk together olive oil, kosher salt, ground black pepper, garlic powder, and Italian seasoning. Carefully butterfly each chicken breast by slicing horizontally about two-thirds through, creating a pocket. Rub the seasoning mixture evenly over both sides of each chicken breast.
- Layer in Baking Dish: Spread half of the marinara sauce evenly over the bottom of the prepared baking dish to create a flavorful base.
- Stuff Chicken: Open each butterflied chicken breast, then place a slice of thick-cut mozzarella inside. Top with 5 slices of pepperoni, a spoonful of marinara sauce, and a sprinkle of grated Parmesan cheese. Close the chicken breast around the filling, securing with toothpicks if needed to keep the stuffing in place. Arrange the stuffed chicken breasts in the baking dish.
- Top with Sauce and Cheese: Pour the remaining marinara sauce over the chicken breasts. Sprinkle the shredded mozzarella cheese evenly on top, followed by the remaining pepperoni slices and Parmesan cheese. Optionally, dust with additional Italian seasoning for extra flavor.
- Bake: Place the baking dish in the preheated oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
Notes
- Butterflying the chicken breasts helps them cook evenly and allows for a delicious stuffed center.
- If needed, secure the stuffed chicken breasts with toothpicks to prevent the filling from leaking out during baking.
- Use a meat thermometer to ensure the chicken is cooked safely to 165°F (74°C).
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For a low-carb option, choose a low-sugar marinara sauce or make your own.
