Ingredients
Scale
Brownie Batter
- 1 box brownie mix (plus ingredients required by the box, typically eggs, oil, and water)
Pecan Topping
- ½ cup chopped pecans
- ¼ cup brown sugar
- 2 tablespoons corn syrup
- 1 tablespoon melted butter
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a mini muffin tin by greasing it or lining it with paper liners to prevent sticking.
- Prepare the Brownie Batter: Follow the instructions on the brownie mix box to prepare the batter, usually involving mixing the brownie mix with eggs, oil, and water until smooth.
- Fill the Muffin Tin: Spoon the prepared brownie batter into each mini muffin cup, filling them about two-thirds full to allow room for rising.
- Make the Pecan Topping: In a small bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and a pinch of salt. Stir thoroughly until all ingredients are well blended.
- Top the Brownies: Spoon a small amount of the pecan mixture on top of each brownie-filled muffin cup. Gently press the topping into the batter so it adheres during baking.
- Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes. The brownie bites are done when they are slightly domed on top, set, and a toothpick inserted into the center comes out mostly clean.
- Cool and Serve: Allow the brownie bites to cool completely in the pan. This helps them firm up and makes removal easier. Once cooled, remove from the tin and serve.
Notes
- Make sure not to overfill the muffin cups to prevent the batter from overflowing during baking.
- The pecan topping can be adjusted to taste; add more or fewer pecans as desired.
- For extra flavor, consider adding a pinch of cinnamon to the pecan topping mixture.
- Store leftover brownie bites in an airtight container at room temperature for up to 3 days.
- These bites can also be frozen for longer storage; thaw at room temperature before serving.
