Brownie Batter
- 1 box family size brownie mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1/4 cup water or coffee (for extra flavor)
Cream Cheese Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- Red gel food coloring
- Blue gel food coloring
Optional Decorations
- Sprinkles
Instructions
- Prepare Brownie Batter: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and water or coffee. Stir until the batter is smooth and well mixed.
- Bake Brownies: Grease a baking pan and pour in the batter. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool completely.
- Make Cream Cheese Filling: In a separate bowl, beat the softened cream cheese together with the powdered sugar until the mixture is creamy and smooth. Divide the filling and add red gel food coloring to one portion and blue gel food coloring to another to achieve vibrant colors.
- Cut Brownie Circles: Once the brownies have cooled, use a small round cookie cutter to cut out brownie circles evenly from the baked slab.
- Assemble the Bombs: Place a dollop of the colored cream cheese filling onto one brownie circle, then gently place another brownie circle on top to create a sandwich.
- Decorate and Chill: Roll the assembled brownie bombs in sprinkles if desired for a festive look. Refrigerate for at least 30 minutes to let the filling set before serving.
Notes
- Using coffee instead of water enhances the chocolate flavor of the brownies.
- Make sure the brownies are completely cool before cutting and assembling to avoid melting the filling.
- Gel food coloring works best for vibrant colors without thinning the filling.
- Refrigerate before serving to keep the cream cheese filling firm.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
