Instructions

  1. Sauté Aromatics: In a large pot or deep skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic for 2–3 minutes until softened and fragrant.
  2. Cook Vegetables: Add chopped zucchini, bell pepper, sliced mushrooms, and halved cherry tomatoes to the pot. Cook for 3–4 minutes until the vegetables begin to soften.
  3. Add Pasta and Broth: Stir in the uncooked pasta, vegetable broth, Italian seasoning, salt, and black pepper. Mix well to combine and bring the mixture to a boil.
