Ingredients
Scale
Pie Crust
- 2 refrigerated pie crusts (or homemade)
Apple Filling
- 3 medium apples (peeled, cored, and finely diced)
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Topping
- 1 tablespoon butter (cut into small pieces)
- 1 egg (beaten, for egg wash)
- Coarse sugar (optional, for topping)
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin to prevent sticking.
- Shape the Crust: Roll out the pie crusts on a floured surface and use a round cutter or glass approximately 4 inches in diameter to cut out 12 circles. Gently press each circle into the bottom and sides of the muffin cups, forming mini pie shells.
- Make the Filling: In a medium bowl, combine the diced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Stir thoroughly to evenly coat the apples with the mixture.
- Fill the Pies: Spoon the apple filling evenly into each prepared crust-lined muffin cup. Place a few small pieces of butter on top of each filling portion.
- Add Crust Tops: Use leftover pie dough to cut small shapes or strips to decorate the tops of each mini pie. Arrange them on top of the filling.
- Egg Wash and Sugar: Brush the tops of each mini pie with the beaten egg to promote browning. Sprinkle coarse sugar on top if desired for a crunchy finish.
- Bake: Bake the pies in the preheated oven for 25 to 30 minutes until the crusts turn golden brown and the filling becomes bubbly.
- Cool and Serve: Allow the mini pies to cool in the tin for 10 minutes before carefully removing them. Serve warm or at room temperature for the best flavor and texture.
Notes
- Using tart apples like Granny Smith provides the best flavor balance.
- These mini pies freeze well; wrap them tightly in plastic wrap and foil, then reheat before serving.
