Instructions
- Brown the Meat and Vegetables: Heat the oil in a large pan over medium-high heat. Add the ground beef, chopped onion, and orange bell pepper. Cook, stirring occasionally, until the beef is browned and the onions become translucent, about 6-8 minutes.
- Sauté the Garlic: Add the chopped garlic to the pan and sauté for about 1 minute, stirring frequently to prevent burning, allowing the garlic to release its aroma.
- Add Tomatoes, Spices, and Cabbage: Stir in the fire-roasted diced tomatoes along with smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Spread the chopped cabbage evenly over the mixture. Cover the pan and cook for 15 to 20 minutes over medium heat, or until the cabbage becomes tender.
- Melt the Cheese: Once the cabbage is tender, sprinkle the 2 cups of shredded cheddar and Jack cheese on top. Cover the pan again and allow the cheese to melt, about 3-5 minutes.
