Ingredients
Scale
Beef and Marinade
- 1 pound thinly sliced beef ribeye or sirloin
- 1/4 cup soy sauce
- 2 tablespoons brown sugar or honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon rice vinegar
- 1 teaspoon gochujang (Korean chili paste)
- 1 tablespoon vegetable oil
Additional Ingredients
- 2 cups cooked white rice or brown rice
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 green onion, sliced
- Sesame seeds, for garnish
Creamy Sauce
- 1/4 cup mayonnaise
- 1 tablespoon plain Greek yogurt or sour cream
- 1 teaspoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon sriracha or gochujang
- Pinch of salt
Instructions
- Prepare the Marinade. In a bowl, whisk together soy sauce, brown sugar (or honey), sesame oil, minced garlic, grated ginger, rice vinegar, and gochujang until well combined.
- Marinate the Beef. Add the thinly sliced beef to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 20 minutes, or overnight for enhanced flavor.
- Make the Creamy Sauce. While the beef marinates, mix mayonnaise, Greek yogurt (or sour cream), rice vinegar, sugar, sriracha (or gochujang), and a pinch of salt in a small bowl. Refrigerate until ready to serve.
- Cook the Beef. Heat vegetable oil in a skillet over medium-high heat. Add the marinated beef and stir-fry for 4–5 minutes, stirring frequently, until the beef is browned and cooked through.
- Warm the Corn. In a separate skillet or using a microwave, heat the corn kernels until warmed through.
- Assemble the Bowls. Divide the cooked rice evenly among four bowls. Top each with cooked beef, warmed corn, a generous drizzle of the creamy sauce, sliced green onions, and a sprinkle of sesame seeds.
- Serve Immediately. Enjoy the flavorful Korean BBQ Beef Bowls hot for best taste and texture.
Notes
- Add sautéed vegetables like zucchini or carrots for extra nutrients and color.
- For a lower-carb alternative, serve the beef and toppings over cauliflower rice instead of traditional rice.
- Make the creamy sauce spicier by increasing the amount of sriracha or gochujang.
- Marinate the beef overnight for deeper flavor and tenderness.
