Description
A delicious and creamy Keto Cauliflower Mac and Cheese dish that offers a low-carb alternative to traditional macaroni and cheese. This recipe features tender steamed cauliflower florets coated in a rich, cheesy sauce made with cheddar and Parmesan cheeses, heavy cream, and butter, seasoned with garlic powder, and garnished with fresh green onions for a flavorful finish.
Ingredients
Scale
Cauliflower
- 1 medium head cauliflower, cut into florets
Cheese Sauce
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Garnish
- 1/4 cup chopped green onions (optional)
Instructions
- Cook cauliflower: Steam or boil the cauliflower florets for 5 to 7 minutes until they become fork-tender. Once cooked, drain thoroughly and set aside to ensure no excess water dilutes the cheese sauce.
- Make cheese sauce: In a large skillet over medium heat, melt the unsalted butter. Add the garlic powder and sauté for about 30 seconds to release its aroma without burning.
- Add cream & cheese: Stir in the heavy cream, shredded cheddar cheese, and grated Parmesan cheese. Continue stirring over medium heat until the mixture becomes smooth, creamy, and fully melted.
- Combine: Add the cooked cauliflower to the skillet and gently mash or stir to fully coat the florets with the rich cheese sauce, allowing the flavors to meld together.
- Season & serve: Season the dish with salt and freshly ground pepper to taste. Garnish with chopped green onions if desired and serve hot for a comforting low-carb meal.
Notes
- Make sure to drain the cauliflower well after cooking to prevent a watery cheese sauce.
- You can substitute the cheddar cheese with a sharper or milder cheese depending on preference.
- To make this recipe vegetarian, ensure the cheeses used do not contain animal rennet.
- For added texture, sprinkle some toasted almond slivers or crushed pork rinds on top before serving.
- This dish can be reheated gently on the stovetop or in the microwave, adding a splash of cream if needed to loosen the sauce.
