Ingredients
Scale
Dry Ingredients
- 3 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 4 packages (3 oz. each) Jello gelatin powder (assorted flavors)
Wet Ingredients
- 1 1/2 cups unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature by the time your dough is ready.
- Cream Butter and Sugar: In a large mixing bowl, use a hand or stand mixer to cream the softened butter and sugar together until the mixture is smooth and creamy. Then, add the egg and vanilla extract and continue to mix until well combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and cream of tartar to evenly distribute the leavening agents and acidic component.
- Combine Ingredients: Gradually add the dry flour mixture to the wet ingredients in the mixer, mixing on low speed until a dough forms evenly without overmixing.
- Divide Dough: Divide the cookie dough evenly into four sections for flavoring.
- Add Jello Powder: Sprinkle about two tablespoons of Jello powder onto each section of dough. Knead each section gently by hand until the powder is fully incorporated, adding a few drops of food coloring if you want more vibrant colors.
- Shape Dough Balls: Roll each section of dough into 1-inch balls, then roll the balls in additional Jello powder or sugar to coat them lightly.
- Place on Baking Sheet: Arrange the coated dough balls onto a baking sheet, spacing them at least two inches apart to allow for spreading.
- Flatten Cookies: Use the bottom of a glass to gently flatten each dough ball to your desired thickness.
- Bake: Bake the cookies in the preheated oven for 8–10 minutes, until the edges are set but centers remain soft.
- Cool: Remove the cookies from the oven and transfer them to a wire rack to cool completely before serving or storing.
