For the beef:
- 1 pound flank steak or sirloin, thinly sliced against the grain
- ¼ cup cornstarch
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon oil for cooking
For the sauce:
- ¼ cup soy sauce
- 3 tablespoons honey
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
For the noodles:
- 8 oz rice noodles or lo mein noodles, cooked and drained
- 2 green onions, sliced
- Sesame seeds, for garnish
- Chili flakes, optional
Instructions
- Marinate and coat the beef: In a medium bowl, toss sliced beef with soy sauce and rice vinegar. Let marinate for 10–15 minutes. Drain excess liquid, then toss beef with cornstarch until evenly coated.
- Cook the beef: Heat oil in a large skillet or wok over medium-high heat. Cook beef in batches for 2–3 minutes per side until browned and crispy. Remove and set aside on a plate.
- Make the sauce: In the same pan, lower heat to medium and add garlic and ginger. Sauté for 30 seconds, then add soy sauce, honey, brown sugar, rice vinegar, and sesame oil. Stir and bring to a simmer. Add the cornstarch slurry and cook until the sauce thickens slightly, about 1 minute.
- Combine everything: Add the cooked beef back to the pan and toss to coat in the sauce. Stir in cooked noodles until evenly combined and heated through.
- Serve: Garnish with green onions, sesame seeds, and chili flakes if desired. Serve immediately.
Notes
- For extra crispiness, make sure the beef is dry before tossing in cornstarch and don’t overcrowd the pan.
- You can substitute rice noodles with spaghetti or soba noodles if preferred.
