Homemade Twix Bites are delightful mini treats featuring a buttery shortbread base topped with a smooth caramel layer and finished with a rich milk chocolate coating. These bite-sized desserts combine classic flavors in an easy-to-make recipe perfect for parties or sweet cravings.

Shortbread Base

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt

Caramel Layer

  • 1 cup soft caramels (about 25 caramels)
  • 2 tablespoons heavy cream

Chocolate Topping

  • 1 1/2 cups milk chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening (optional, for smoother chocolate)


Instructions

  1. Prepare Shortbread Base: Preheat your oven to 350°F and line a mini muffin tin with paper liners or grease the cups lightly. In a food processor or a mixing bowl, combine the flour, sugar, salt, and cold cubed butter. Pulse or cut in the butter until the mixture looks like coarse crumbs. Press about one tablespoon of this mixture firmly into the bottom of each mini muffin cup to create the shortbread base.
  2. Bake Shortbread: Bake the pressed shortbread bases for 10 to 12 minutes until they turn lightly golden. Remove from the oven and allow them to cool completely in the pan.
  3. Make Caramel Layer: In a microwave-safe bowl, combine the soft caramels and heavy cream. Microwave in 30-second intervals, stirring between each, until the caramel is melted, smooth, and creamy. Spoon about one teaspoon of this caramel mixture over each cooled shortbread base. Let them set at room temperature for 10 to 15 minutes.
  4. Melt Chocolate: Melt the milk chocolate chips along with the coconut oil (if using) in the microwave in 30-second bursts, stirring until smooth and fully melted.
  5. Assemble Bites: Spoon or pipe the melted chocolate over the caramel layer, smoothing out the tops for an even finish. Place the assembled mini bites in the refrigerator and chill for 20 to 30 minutes or until the chocolate is firm and set.
