Description

These High Protein Blueberry Bagels are a delicious and nutritious breakfast option made with Greek yogurt, whey protein powder, and fresh or frozen blueberries. They offer a perfect balance of protein, carbohydrates, and healthy fats, making them an ideal choice for a healthy start to your day. Easy to prepare and bake, these bagels are soft, flavorful, and can be enjoyed plain or with your favorite toppings.

Ingredients

Scale

Bagel Dough

  • 1 cup plain Greek yogurt (non-fat or full-fat)
  • 1 cup self-rising flour (or 1 cup all-purpose flour + 1 1/2 teaspoons baking powder + 1/4 teaspoon salt)
  • 1 scoop (about 25g) unflavored or vanilla whey protein powder
  • 1/2 cup fresh or frozen blueberries
  • 1 tablespoon honey (optional)

Egg Wash

  • 1 egg (beaten)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the flour, whey protein powder, and if using all-purpose flour, add the baking powder and salt. Mix these dry ingredients well to evenly distribute the leavening agents and protein powder.
  3. Add Wet Ingredients: Add Greek yogurt and honey (if using) to the dry mixture and stir until a dough forms. The mixture should come together into a slightly sticky dough.
  4. Incorporate Blueberries: Gently fold in the fresh or frozen blueberries, being careful not to crush them to avoid bleeding into the dough.
  5. Knead the Dough: Turn the dough onto a lightly floured surface and knead gently for 1 to 2 minutes until smooth and elastic.
  6. Shape the Bagels: Divide the dough into 4 equal portions. Roll each piece into a rope approximately 10-12 inches long, then shape each rope into a ring, pinching the ends together securely to form the bagel shape.
  7. Apply Egg Wash: Place the bagels on the prepared baking sheet spaced apart. Brush the tops of each bagel with the beaten egg to give them a shiny, golden crust when baked.
  8. Bake: Bake the bagels in the preheated oven for 22 to 25 minutes, or until they turn golden brown and are cooked through.
  9. Cool: Remove the bagels from the oven and let them cool on a wire rack for at least 10 minutes before slicing and serving.

Notes

  • Use frozen blueberries straight from the freezer to prevent them from bleeding into the dough.
  • These bagels are delicious plain or topped with cream cheese, almond butter, or additional Greek yogurt and fruit.
  • Store bagels in the refrigerator for up to 3 days or freeze them for longer shelf life.
