Bagel Dough
- 1 cup plain Greek yogurt (non-fat or full-fat)
- 1 cup self-rising flour (or 1 cup all-purpose flour + 1 1/2 teaspoons baking powder + 1/4 teaspoon salt)
- 1 scoop (about 25g) unflavored or vanilla whey protein powder
- 1/2 cup fresh or frozen blueberries
- 1 tablespoon honey (optional)

Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the flour, whey protein powder, and if using all-purpose flour, add the baking powder and salt. Mix these dry ingredients well to evenly distribute the leavening agents and protein powder.
- Add Wet Ingredients: Add Greek yogurt and honey (if using) to the dry mixture and stir until a dough forms. The mixture should come together into a slightly sticky dough.
- Incorporate Blueberries: Gently fold in the fresh or frozen blueberries, being careful not to crush them to avoid bleeding into the dough.
- Knead the Dough: Turn the dough onto a lightly floured surface and knead gently for 1 to 2 minutes until smooth and elastic.
- Shape the Bagels: Divide the dough into 4 equal portions. Roll each piece into a rope approximately 10-12 inches long, then shape each rope into a ring, pinching the ends together securely to form the bagel shape.
- Apply Egg Wash: Place the bagels on the prepared baking sheet spaced apart. Brush the tops of each bagel with the beaten egg to give them a shiny, golden crust when baked.
- Bake: Bake the bagels in the preheated oven for 22 to 25 minutes, or until they turn golden brown and are cooked through.
