- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese

Instructions
- Heat the Oil and Sauté Onion: Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
- Add Garlic: Stir in the minced garlic and cook for another 30 seconds to release its flavor.
- Toast the Orzo: Add the orzo pasta to the pan and toast lightly for 1–2 minutes while stirring continuously to prevent burning and to enhance its nutty taste.
- Add Tomatoes and Broth: Pour in the diced tomatoes with their juice and the chicken or vegetable broth. Stir in dried oregano, salt, and black pepper to season the mixture.
- Simmer the Orzo: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for 12–15 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- Finish with Cheese and Herbs: Remove the pan from heat and stir in the grated Parmesan cheese and chopped parsley to add creaminess and freshness.
- Serve: Serve the manestra warm. Optionally, top with cooked chicken or crumbled feta cheese to add protein and extra flavor.
