  • 2 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the Oil and Sauté Onion: Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
  2. Add Garlic: Stir in the minced garlic and cook for another 30 seconds to release its flavor.
  3. Toast the Orzo: Add the orzo pasta to the pan and toast lightly for 1–2 minutes while stirring continuously to prevent burning and to enhance its nutty taste.
  4. Add Tomatoes and Broth: Pour in the diced tomatoes with their juice and the chicken or vegetable broth. Stir in dried oregano, salt, and black pepper to season the mixture.
  5. Simmer the Orzo: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and let it simmer for 12–15 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  6. Finish with Cheese and Herbs: Remove the pan from heat and stir in the grated Parmesan cheese and chopped parsley to add creaminess and freshness.
  7. Serve: Serve the manestra warm. Optionally, top with cooked chicken or crumbled feta cheese to add protein and extra flavor.
