Instructions
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Mix wet ingredients: In another bowl, whisk together the eggs, milk, vanilla extract, and melted unsalted butter until smooth.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir gently until a soft dough forms, being careful not to overmix.
- Roll and cut dough: Turn the dough out onto a lightly floured surface and roll it to about 1/2-inch thickness. Use a doughnut cutter or two round cutters (one large and one small) to cut out doughnut shapes.
- Heat oil: Heat oil in a deep fryer or large, deep pot to 350°F (175°C), ensuring there is enough oil for the doughnuts to float while frying.
- Fry doughnuts: Carefully place the doughnuts in the hot oil in batches, frying them for 2 to 3 minutes total, turning once halfway through frying, until the doughnuts are golden brown on both sides.
- Drain and dust: Remove the fried doughnuts with a slotted spoon and drain on paper towels to remove excess oil. While still warm, dust generously with powdered sugar before serving.
