- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella pearls or diced fresh mozzarella
- 1/4 cup fresh basil leaves, torn or chopped
- 2 tablespoons balsamic glaze
- Salt and black pepper to taste
Instructions
- Cook the Gnocchi: Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions, usually 2–3 minutes, until they float. Drain and immediately toss with olive oil in a large bowl to prevent sticking. Let cool for 5–10 minutes.
- Add Fresh Ingredients: Once the gnocchi is slightly cooled, add cherry tomatoes, mozzarella, and basil. Gently toss to combine. Season with salt and pepper to taste.
- Finish and Serve: Drizzle with balsamic glaze just before serving, and garnish with additional basil if desired.
Notes
- For added flavor, sear the cooked gnocchi in a hot skillet with olive oil until golden before tossing.
- You can also use marinated mozzarella for extra depth.
