Description

Gnocchi Caprese Salad is a delightful Italian-inspired dish combining tender gnocchi with fresh cherry tomatoes, mozzarella, and basil, all drizzled with balsamic glaze. This easy-to-make salad is perfect as a light meal or side dish, offering a refreshing and flavorful twist on the classic Caprese flavors with the comforting addition of gnocchi.

Ingredients

Scale

Ingredients

  • 1 pound shelf-stable or refrigerated gnocchi
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella pearls or diced fresh mozzarella
  • 1/4 cup fresh basil leaves, torn or chopped
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. Cook the Gnocchi: Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions, usually 2–3 minutes, until they float. Drain and immediately toss with olive oil in a large bowl to prevent sticking. Let cool for 5–10 minutes.
  2. Add Fresh Ingredients: Once the gnocchi is slightly cooled, add cherry tomatoes, mozzarella, and basil. Gently toss to combine. Season with salt and pepper to taste.
  3. Finish and Serve: Drizzle with balsamic glaze just before serving, and garnish with additional basil if desired.

Notes

  • For added flavor, sear the cooked gnocchi in a hot skillet with olive oil until golden before tossing.
  • You can also use marinated mozzarella for extra depth.
  • Best served slightly warm or at room temperature.
