Description

Salad Ingredients

  • 1 pound shelf-stable or refrigerated gnocchi
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • ½ cup fresh basil leaves, torn or chopped
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste


Instructions

  1. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions until they float to the surface, about 2–3 minutes. Drain well and let them cool slightly.
  2. Sauté the Gnocchi: Heat olive oil in a large skillet over medium heat. Add the drained gnocchi and sauté for 5–6 minutes until they develop a lightly golden and crispy exterior. Remove from heat and allow to cool to room temperature.
  3. Combine the Salad: In a large mixing bowl, add the sautéed gnocchi, cherry tomatoes, fresh mozzarella balls, and torn basil leaves. Drizzle with balsamic glaze and gently toss everything to combine evenly. Season with salt and black pepper to taste.
  4. Serve: Serve the salad immediately at room temperature or refrigerate for 15–20 minutes to enjoy it chilled for a refreshing alternative.

Notes

  • To make your own balsamic glaze, simmer ½ cup balsamic vinegar with 1 tablespoon honey until reduced and thickened.
  • Add grilled chicken or a dollop of pesto to make the salad heartier and more filling.
