  • 1/3 cup chopped onion
  • 1/2 cup shredded cheddar cheese (or any preferred cheese)

  • 1/2 cup cooked and crumbled bacon or sausage (optional)

Instructions

  1. Preheat & Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick cooking spray to prevent sticking and ensure easy removal.
  2. Mix Eggs and Seasoning: In a large bowl, whisk together 8 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until the mixture is smooth and well combined.
  3. Add Vegetables and Cheese: Stir in 1/2 cup diced bell peppers, 1/2 cup chopped spinach or kale, 1/3 cup chopped onion, and 1/2 cup shredded cheddar cheese. If using, add 1/2 cup cooked and crumbled bacon or sausage for added flavor and protein.
  4. Fill Muffin Cups: Evenly pour the egg mixture into the prepared muffin cups, filling each about 3/4 full to allow space for expansion while baking.
  5. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18–22 minutes, or until the muffins are puffed up and the centers are set and no longer jiggly.
  6. Cool and Serve: Remove from the oven and let the muffins cool for a few minutes in the tin. Carefully remove each muffin and serve warm. Alternatively, allow to cool completely and store in the refrigerator for up to 4 days.
