- 1/2 cup shredded cheddar cheese (or any preferred cheese)

Instructions
- Preheat & Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick cooking spray to prevent sticking and ensure easy removal.
- Mix Eggs and Seasoning: In a large bowl, whisk together 8 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until the mixture is smooth and well combined.
- Add Vegetables and Cheese: Stir in 1/2 cup diced bell peppers, 1/2 cup chopped spinach or kale, 1/3 cup chopped onion, and 1/2 cup shredded cheddar cheese. If using, add 1/2 cup cooked and crumbled bacon or sausage for added flavor and protein.
- Fill Muffin Cups: Evenly pour the egg mixture into the prepared muffin cups, filling each about 3/4 full to allow space for expansion while baking.
- Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18–22 minutes, or until the muffins are puffed up and the centers are set and no longer jiggly.
- Cool and Serve: Remove from the oven and let the muffins cool for a few minutes in the tin. Carefully remove each muffin and serve warm. Alternatively, allow to cool completely and store in the refrigerator for up to 4 days.
