Description

This Fried Egg Quesadilla is a quick and delicious meal perfect for breakfast or any time you crave a cheesy, savory treat. It features crispy golden tortillas filled with fried eggs and melted cheddar or mozzarella cheese, complemented by optional avocado slices and served with salsa, sour cream, and fresh herbs for added flavor.

Ingredients

Scale

Quesadilla Ingredients

  • 2 flour tortillas
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon butter
  • Salt and pepper, to taste

Optional Toppings

  • Sliced avocado
  • Salsa
  • Sour cream
  • Fresh herbs (such as cilantro or parsley)

Instructions

  1. Prepare the Skillet: Heat a non-stick skillet over medium heat and melt a small amount of butter to prevent sticking and add flavor.
  2. Fry the Eggs: Crack an egg into the skillet, season with salt and pepper, and cook until the white is set but the yolk remains slightly runny. Remove the cooked egg and repeat the process with the second egg.
  3. Assemble the Quesadilla: Place one tortilla in the skillet and evenly sprinkle half of the shredded cheese over it. Add the fried eggs on top, and if desired, add sliced avocado. Then sprinkle the remaining cheese over the eggs and cover with the second tortilla.
  4. Cook the Quesadilla: Cook the assembled quesadilla for 2-3 minutes on each side, or until both sides are golden brown and crispy and the cheese inside is melted.
  5. Serve & Enjoy: Remove the quesadilla from the skillet, slice it into wedges, and serve warm with salsa, sour cream, and fresh herbs for garnish.

Notes

  • For fully cooked yolks, cook the eggs longer before assembling.
  • Use your preferred type of shredded cheese for different flavors.
  • Adding sliced avocado provides a creamy texture that complements the crispy quesadilla.
  • You can customize toppings based on your taste preferences.
  • Cook on medium heat to ensure the quesadilla crisps without burning.
