Instructions
- Preheat and Prepare Pastry: Preheat the oven to 400°F. Lightly flour a clean surface and roll out the puff pastry sheet slightly to even out the edges. Cut into 6 equal rectangles and place them on a parchment-lined baking sheet.
- Mix Peach Filling: In a bowl, toss the peach slices with granulated sugar, brown sugar, cinnamon, and vanilla extract until they are evenly coated and flavorful.
- Assemble Tarts: Arrange the peach slices in rows on top of each puff pastry rectangle, leaving a 1/2-inch border around the edges unfilled. Brush the exposed edges of the pastry with melted butter to help achieve golden browning.
- Bake: Bake the assembled tarts for 18–20 minutes, or until the pastry is puffed and golden brown, indicating they are fully cooked and crisp.
