For the Batter
- 1/4 cup salted butter, melted
- 1 cup cake flour (all-purpose flour can be used as a substitute)
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 cup milk
For the Filling
- 1 can (21 ounces) cherry pie filling
Instructions
- Preheat the oven. Preheat your oven to 350° F. Pour the melted butter evenly into the bottom of a 2.5-quart baking dish to create the base layer for the cobbler.
- Prepare the batter. In a medium bowl, whisk together the cake flour, granulated sugar, baking powder, and milk until the mixture is smooth and well combined.
- Assemble the cobbler. Pour the prepared batter gently over the melted butter in the baking dish. Do not stir. Then, evenly spoon the cherry pie filling over the batter, again without stirring, allowing the layers to remain distinct.
- Bake the cobbler. Place the baking dish in the preheated oven and bake for 45 minutes, or until the crust on top is a beautiful golden brown color.
- Cool before serving. Remove the cobbler from the oven and let it stand for 10 minutes, allowing the flavors to set before serving warm.
Notes
- Using cake flour gives the batter a tender texture, but all-purpose flour will work fine if that’s what you have.
- Do not stir the batter and filling after layering to maintain the cobbler’s unique texture.
- Letting the cobbler rest after baking helps it firm up and makes serving easier.
