This Easter Snack Mix is a delightful and colorful treat combining crunchy cereals, pretzels, cashews, and festive peanut butter and milk chocolate M&M’s, all coated in creamy white chocolate. Perfect for holiday gatherings or as a sweet snack, it’s easy to prepare and can be made ahead of time.

Chocolate Coating
- 3 cups white chocolate chips
- 1 tablespoon coconut oil (optional)
Snack Mix
- 4 cups multigrain Cheerios
- 4 cups Rice Chex cereal
- 2 cups pretzel sticks
- 1 cup roasted cashews (optional)
- 1 9-ounce bag peanut butter M&M eggs
- 1 cup pastel milk chocolate M&M’s
- ½ cup shredded, sweetened coconut
- Extra white chocolate chips for topping (optional)
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper to create a non-stick surface for mixing and setting the snack.
- Melt White Chocolate: Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second increments, stirring after each, until the mixture is smooth and melted.
- Combine Dry Ingredients: On the prepared baking sheet, mix the Cheerios, Rice Chex cereal, pretzel sticks, and roasted cashews (if using). Toss gently to combine evenly.
- Add M&M’s: Add half of the peanut butter M&M eggs and half of the pastel milk chocolate M&M’s to the dry mix.
- Drizzle with White Chocolate: Pour the melted white chocolate evenly over the mixed snacks on the baking sheet.
- Toss to Coat: Using a spatula or large spoon, gently and quickly toss the mixture until all pieces are well coated with the white chocolate.
- Add Remaining M&M’s and Coconut: Sprinkle in the remaining M&M’s and the shredded sweetened coconut, then gently toss once more to combine.
- Optional Toppings: If desired, sprinkle additional white chocolate chips over the top for extra texture and flavor.
- Set: Allow the snack mix to set at room temperature for 20 to 30 minutes, or until the white chocolate hardens and binds the ingredients together.
- Store: Transfer the cooled Easter Snack Mix to a large bowl, jar with cover, or resealable plastic bag. It can be stored for up to a couple of days before serving.
Notes
- Coconut oil is optional but helps the white chocolate set firmer and gives a smoother coating.
- You can omit the roasted cashews or substitute with other nuts based on preference or allergies.
- Make sure to stir the white chocolate thoroughly during melting to prevent burning or clumping.
