Ingredients
Scale
Jam Ingredients
- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
Chocolate Mixture
- 4 oz dark chocolate (60–70% cocoa), finely chopped
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine Ingredients: In a medium saucepan, combine the hulled and chopped strawberries, granulated sugar, and lemon juice to start the jam base.
- Cook the Mixture: Cook over medium heat, stirring frequently to prevent sticking, until the strawberries break down and the mixture thickens, which typically takes about 10 to 12 minutes.
- Mash the Berries: Use a potato masher or the back of a spoon to mash the strawberries to your preferred texture, whether chunky or smoother.
- Add Chocolate and Flavorings: Remove the saucepan from heat and immediately stir in the finely chopped dark chocolate, vanilla extract, and a pinch of salt. Continue stirring until the chocolate fully melts and the jam becomes smooth.
- Cool and Store: Allow the jam to cool slightly before transferring it to a clean jar or container. Then let it cool to room temperature before sealing the container. Finally, store the jam in the refrigerator for up to 2 weeks.
Notes
- This rich and slightly tart jam is delicious on toast, biscuits, pancakes, or as a topping over ice cream.
- For a smoother jam texture, blend the cooked strawberries before adding the dark chocolate and other flavorings.
- Use dark chocolate with 60-70% cocoa content for the best balance of richness and smooth melting.
- Make sure to store the jam in a clean, airtight container to preserve freshness.
