Description

This Crockpot Healthy White Chicken Chili is a comforting and nutritious slow cooker meal featuring tender chicken breasts, white beans, and a blend of spices, finished with creamy Greek yogurt and fresh lime juice for a zesty twist. Perfect for a wholesome family dinner or meal prep, it offers a hearty yet light flavor profile with gluten-free ingredients.

Ingredients

Scale

Main Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 3 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Finishing Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Prepare Ingredients: Place the chicken breasts in the bottom of the crockpot. Add the finely chopped onion, minced garlic, white beans, diced green chiles, and chicken broth on top.
  2. Add Seasonings: Sprinkle the ground cumin, chili powder, dried oregano, salt, and black pepper evenly over the ingredients in the crockpot. Stir gently to combine all ingredients without disturbing the chicken placement too much.
  3. Cook: Cover the crockpot and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours until the chicken is tender and fully cooked through.
  4. Shred Chicken: Remove the cooked chicken breasts from the crockpot and shred them thoroughly using two forks. Return the shredded chicken to the crockpot and stir well to distribute evenly.
  5. Add Creamy Finish: Add the plain Greek yogurt and fresh lime juice to the crockpot. Stir carefully until the chili becomes creamy and thoroughly combined.
  6. Final Cooking: Cook the chili for an additional 10 minutes to allow the flavors to meld and the creaminess to integrate fully.
  7. Serve: Ladle the chili into bowls and garnish with chopped fresh cilantro if desired. Serve warm.

Notes

  • For extra flavor, add diced jalapeño or a pinch of cayenne pepper to increase heat.
  • This chili can be topped with avocado slices, shredded cheese, or crushed tortilla chips for added texture and flavor.
  • Leftovers store well in the refrigerator for up to 4 days and also freeze nicely for later meals.
