Description

These Crispy Chipotle Black Bean Taquitos are a flavorful and satisfying vegetarian Mexican-inspired appetizer. Made with a smoky chipotle pepper and black bean filling, wrapped in corn tortillas and baked until crispy, they offer a perfect balance of spice, texture, and cheesy richness. Served with classic toppings like sour cream, guacamole, and salsa, these taquitos are easy to prepare and ideal for sharing at any gathering.

Ingredients

Scale

Filling

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 chipotle pepper in adobo, minced
  • 1 tablespoon adobo sauce
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded pepper jack or cheddar cheese
  • 1 tablespoon lime juice

Taquitos

  • 8 small corn tortillas
  • 2 tablespoons olive oil (for brushing)

For Serving (Optional)

  • Sour cream
  • Guacamole
  • Salsa
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and allow easy cleanup.
  2. Prepare Filling: In a bowl, mash the black beans with a fork or potato masher until mostly smooth but retaining some texture for bite. Stir in the minced chipotle pepper, adobo sauce, cumin, garlic powder, onion powder, salt, pepper, lime juice, and shredded cheese until thoroughly combined.
  3. Warm Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 20–30 seconds to soften and make them pliable for rolling.
  4. Roll Taquitos: Place about 2 tablespoons of the black bean filling along one edge of each warm tortilla. Roll tightly to enclose the filling, and place each taquito seam-side down on the prepared baking sheet to keep them sealed during baking.
  5. Brush with Oil: Lightly brush the taquitos on top with olive oil to help achieve a golden, crispy finish.
  6. Bake: Bake in the preheated oven for 15–20 minutes, flipping the taquitos halfway through to ensure even crispiness on both sides.
  7. Serve: Remove from the oven once golden and crisp. Serve warm with optional toppings such as sour cream, guacamole, salsa, chopped cilantro, and lime wedges for an added burst of flavor.

Notes

  • For extra crispiness, lightly spray the taquitos with cooking oil before baking.
  • Taquitos can be air-fried at 400°F (204°C) for 8–10 minutes as an alternative cooking method.
  • Flour tortillas can be substituted for corn tortillas based on personal preference.
