Description

Crispy Apple Pie Egg Rolls are a delightful twist on classic apple pie, featuring a sweet apple filling wrapped in crunchy egg roll wrappers. Perfect as a dessert or snack, these egg rolls can be fried to golden perfection or baked for a lighter option, delivering a deliciously warm and cinnamon-spiced treat in every bite.

Ingredients

Scale

Filling

  • 4 cups diced apples (Granny Smith or Honeycrisp work well)
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Wrapper

  • 12-15 egg roll wrappers

For Cooking

  • Oil for frying (or cooking spray for baking)

Instructions

  1. Cook the Apple Filling: In a saucepan, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat, stirring occasionally, until the apples soften, about 5-7 minutes.
  2. Thicken the Mixture: Add the cornstarch to the saucepan and continue cooking for another 2 minutes, stirring constantly until the mixture thickens. Remove from heat and allow it to cool completely.
  3. Prepare Wrappers: Lay one egg roll wrapper flat on a clean surface in a diamond shape, with one corner pointing towards you.
  4. Add Filling: Spoon about 2 tablespoons of the cooled apple mixture onto the lower third of the wrapper, closest to you.
  5. Fold Over: Fold the bottom corner over the filling, then fold in the left and right sides to enclose the filling.
  6. Roll and Seal: Roll the wrapper tightly toward the top corner, sealing the edge with a dab of water to prevent opening during cooking.
  7. Fry the Egg Rolls: Heat oil in a deep fryer or large pan to 350°F (175°C). Carefully place the egg rolls in the oil, frying them for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
  8. Bake the Egg Rolls (Alternative): Preheat the oven to 400°F (200°C). Place the egg rolls on a baking sheet and spray them lightly with cooking spray. Bake for 15-20 minutes, turning halfway through, until golden and crispy.

Notes

  • Using tart apples like Granny Smith balances the sweetness of the filling.
  • Make sure the filling is cool before wrapping to avoid soggy wrappers.
  • If baking, spray the rolls well for crispiness.
  • Serve warm with vanilla ice cream or caramel sauce for an extra treat.
