Instructions
- Cook the Apple Filling: In a saucepan, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat, stirring occasionally, until the apples soften, about 5-7 minutes.
- Thicken the Mixture: Add the cornstarch to the saucepan and continue cooking for another 2 minutes, stirring constantly until the mixture thickens. Remove from heat and allow it to cool completely.
- Prepare Wrappers: Lay one egg roll wrapper flat on a clean surface in a diamond shape, with one corner pointing towards you.
- Add Filling: Spoon about 2 tablespoons of the cooled apple mixture onto the lower third of the wrapper, closest to you.
- Fold Over: Fold the bottom corner over the filling, then fold in the left and right sides to enclose the filling.
- Roll and Seal: Roll the wrapper tightly toward the top corner, sealing the edge with a dab of water to prevent opening during cooking.
- Fry the Egg Rolls: Heat oil in a deep fryer or large pan to 350°F (175°C). Carefully place the egg rolls in the oil, frying them for 2-3 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.
- Bake the Egg Rolls (Alternative): Preheat the oven to 400°F (200°C). Place the egg rolls on a baking sheet and spray them lightly with cooking spray. Bake for 15-20 minutes, turning halfway through, until golden and crispy.
