Spring Roll Filling

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cooking oil (for sautéing)
  • 1 teaspoon fresh cilantro, chopped
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Prepare the filling: Heat a skillet over medium heat and add 1 teaspoon of cooking oil. Sauté the minced garlic for about 30 seconds until fragrant. Then add shredded cabbage, carrots, and chopped mushrooms. Cook for roughly 5 minutes, stirring occasionally, until vegetables are tender but still have a slight crunch.
  2. Flavor it: Drizzle the soy sauce and sesame oil evenly over the vegetable mixture. Stir well to combine all flavors. Season with salt, black pepper, and red pepper flakes to taste. Remove from heat and stir in chopped cilantro. Let the filling cool slightly.
  3. Wrap it: Lay a spring roll wrapper flat on a clean surface. Place about two tablespoons of filling near one corner. Fold the corner over the filling, then fold in the sides tightly, rolling up like a burrito. Seal the edge with a dab of water to keep it closed. Repeat this process with remaining wrappers and filling.
  4. Air fry: Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the spring rolls in a single layer in the basket without overcrowding them. Spray the tops of the spring rolls lightly with oil. Air fry for 10 to 12 minutes, turning halfway through if needed, until they turn golden brown and crispy.
