- 1/2 cup sour cream
- 1/4 cup milk (or more for desired consistency)
- 2 tablespoons butter, melted
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Seasonings & Garnish
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup chopped green onions (optional, for garnish)
Instructions
- Boil Potatoes: Bring a large pot of salted water to a boil and add the peeled and chunked russet potatoes. Cook for about 12-15 minutes, or until the potatoes are tender when pierced with a fork.
- Drain Potatoes: Drain the water from the potatoes and return them to the pot to prepare for mashing.
- Mash Potatoes: Add sour cream, milk, melted butter, garlic powder, and a pinch of salt and pepper to the potatoes. Mash everything together until the potatoes become smooth and creamy.
- Add Cheeses: Stir in the shredded cheddar and mozzarella cheeses into the mashed potatoes, mixing until the cheeses are melted and fully incorporated.
- Season to Taste: Taste the cheesy mashed potatoes and adjust the seasoning with additional salt and pepper if needed.
- Garnish and Serve: Transfer the creamy cheesy potatoes to a serving dish and garnish with chopped green onions, if desired. Serve warm as a delicious side dish.
Notes
- For a smoother texture, warm the milk slightly before adding.
- Feel free to substitute mozzarella cheese with Monterey Jack or a cheese blend for a different flavor profile.
- Adding a pinch of nutmeg can enhance the flavor if desired.
- Use Yukon Gold potatoes for a creamier, naturally buttery taste as an alternative.
- This dish pairs wonderfully with roasted meats, grilled vegetables, or a fresh salad.
