These Chocolate-Dipped Easter Rice Krispie Treats are a fun and festive twist on the classic marshmallow cereal treat. - 16 cups mini marshmallows (divided)

Instructions
- Prepare the pan: Line a 9×13-inch pan with foil and lightly grease it with cooking spray to ensure the treats don’t stick.
- Melt butter and marshmallows: In a large pot over low heat, melt the butter. Add 12 cups of the mini marshmallows and stir continuously until they are fully melted and combined.
- Add salt and cereal: Remove the pot from heat. Stir in the salt and then add the Rice Krispies cereal. Mix until the cereal is evenly coated with the marshmallow mixture. Then add the remaining 4 cups of mini marshmallows and fold them gently until combined.
- Press mixture into pan: Transfer the sticky mixture into the prepared pan. Use a piece of parchment paper sprayed with non-stick spray to press the mixture evenly and firmly into the pan. Allow it to cool completely and set.
- Cut into squares: Once fully cooled, remove the treats from the pan using the foil and cut them into 20-24 squares.
- Melt chocolates using double boiler: Set up a double boiler by simmering about 1 inch of water in two separate pots. Place a heat-safe bowl over each pot, making sure the bowl does not touch the water. Melt the dark chocolate in one bowl and the white chocolate in the other, stirring occasionally until smooth and glossy.
- Dip and decorate treats: Dip each Rice Krispie square halfway into the melted chocolate, allowing any excess to drip off. Insert a popsicle stick into each dipped treat and optionally decorate with festive sprinkles while the chocolate is still wet.
- Let chocolate set: Place the dipped treats on parchment or a wire rack and allow the chocolate to set completely before serving, ensuring a firm chocolate coating.

- Using parchment paper sprayed with non-stick spray makes pressing and removing the treats easier.
- Make sure the double boiler bowls do not touch the simmering water to avoid overheating and seizing the chocolate.
