Description

Chicken Parmesan Sloppy Joes are a tasty twist on the classic sloppy joe, featuring ground chicken simmered in a rich marinara sauce with Italian herbs and topped with melted mozzarella and Parmesan cheeses. Served on toasted hamburger buns, this easy-to-make dish provides a cheesy, satisfying meal perfect for quick weeknight dinners.

Ingredients

Scale

Chicken Mixture

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 tablespoon tomato paste
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Buns and Garnish

  • 4 hamburger buns
  • 1 tablespoon butter (optional, for toasting buns)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Sauté Onions and Garlic: In a large skillet, heat olive oil over medium heat. Add finely chopped onions and cook for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Cook Ground Chicken: Add the ground chicken to the skillet. Season with salt and pepper. Cook the chicken, breaking it up with a spoon, for about 6 to 8 minutes until browned and cooked through.
  3. Add Sauce and Herbs: Stir in the marinara sauce, tomato paste, dried basil, and dried oregano. Mix well. Let the mixture simmer for 5 to 7 minutes until it thickens slightly.
  4. Melt the Cheeses: Stir shredded mozzarella and grated Parmesan into the chicken mixture until the cheeses melt completely and the mixture is creamy.
  5. Toast Buns (Optional): While the filling simmers, optionally toast the hamburger buns in a skillet with a little butter until golden brown for added texture and flavor.
  6. Assemble Sloppy Joes: Spoon the cheesy chicken mixture onto the bottom half of each toasted bun. Add extra cheese or fresh herbs like basil or parsley if desired. Cover with the top bun and serve immediately while hot.

Notes

  • For an upgraded version, use toasted garlic bread or ciabatta rolls instead of regular hamburger buns.
  • This recipe works just as well with ground turkey as a substitute for ground chicken.
  • Adjust seasoning and herbs to your preference for a more personalized flavor.
  • Leftover filling can be refrigerated for up to 3 days and reheated on the stovetop.
