Ingredients
Scale
Chicken
- 3 boneless, skinless chicken breasts (about 450g)
- Salt and pepper to taste
- 2 tablespoons olive oil (divided)
Sandwich Components
- 2 ripe avocados
- 4 slices sourdough bread
- 1 cup fresh spinach leaves
- 1 cup shredded sharp cheddar cheese
Instructions
- Dice and Season Chicken: Begin by cutting the chicken breasts into bite-sized pieces. Season them well with salt and pepper to enhance the flavor.
- Cook Chicken: Heat a skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the diced chicken and cook for 7-10 minutes until the pieces are golden brown and cooked through.
- Mash Avocado: While the chicken cooks, peel and pit the avocados. Mash them in a bowl with a pinch of salt until creamy and smooth.
- Assemble Panini: Lay out a slice of sourdough bread and layer fresh spinach leaves, the cooked chicken pieces, mashed avocado, and shredded cheddar cheese. Top with another slice of bread to form the sandwich.
- Brush and Grill: Brush both sides of the assembled panini with the remaining tablespoon of olive oil. Place the sandwich on the skillet over medium-low heat and grill each side for 3-4 minutes until the bread is golden brown and the cheese has melted.
- Serve: Remove the panini from the skillet, slice it diagonally, and serve immediately while hot and crispy.
Notes
- Using ripe avocados ensures smooth and creamy texture for the sandwich.
- You can substitute sourdough bread with any hearty bread like ciabatta or multigrain.
- For extra flavor, add a spread of mustard or mayonnaise before assembling.
- Make sure to grill on medium-low heat to prevent the bread from burning before the cheese melts.
- Leftover paninis can be wrapped and refrigerated, but are best eaten fresh.
