Description

These homemade cereal bars combine crispy corn pops cereal with a gooey marshmallow and butter mixture, creating a nostalgic and delicious treat that’s perfect for snacks, lunchboxes, or quick desserts. Quick and easy to prepare, this recipe requires just a few ingredients and minimal cooking time for a sweet, crunchy delight.

Ingredients

Scale

Ingredients

  • 6 tablespoons (84 g) unsalted butter
  • 10 ounce (284 g) bag of large marshmallows
  • 7 cups (196 g) corn pops cereal

Instructions

  1. Prepare the Baking Pan: Line the bottom of a 9×13-inch baking pan with parchment paper to prevent sticking. Set the pan aside so it’s ready when you finish mixing the ingredients.
  2. Melt Butter and Marshmallows: In a large pot over medium-high heat, melt the unsalted butter. Once melted, add the large marshmallows. Stir continuously to ensure the marshmallows melt evenly without burning. Keep stirring frequently for a smooth, gooey mixture.
  3. Mix in Cereal: Remove the pot from heat once the marshmallows are fully melted. Immediately add the corn pops cereal to the marshmallow mixture. Stir thoroughly until every cereal piece is coated with the marshmallow butter blend. You can add up to an extra 1/2 cup of cereal for a less gooey texture if you prefer.
  4. Spread and Shape: Transfer the mixture into the prepared baking pan. Use the back of a silicone spatula to gently press down and evenly distribute the mixture across the pan. Avoid compressing it too much to maintain a light texture.
  5. Cool and Cut: Let the cereal bars cool and set in the pan for about 2 hours at room temperature. Once set, lift the bars out using the parchment paper and cut into squares. Serve and enjoy.

Notes

  • For a different texture, try adding an extra 1/2 cup of cereal for a crunchier, less gooey bar.
  • Use silicone spatulas or wooden spoons to mix the hot marshmallow mixture safely.
  • Store the cereal bars in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Adding mix-ins like mini chocolate chips or nuts can customize the bars to your liking.
  • Ensure stirring is continuous during marshmallow melting to prevent burning and achieve a smooth consistency.
